The Sauvignon Blanc was machine harvested in the cool mornings of late March, then destemmed and gently pressed to tank. The juice was then fermented on gross lees using wild yeast strains, once fermented the wine was racked off gross lees and allowed to sit for 6 weeks on light lees cold, then racked, stabilised, filtered and finally bottled.
